It's been a long time coming -- ten years and counting -- but we finally have a long-term kitchen space to call our own.
Since we only produce seasonally, it's always been hard to find a suitable space that is financially viable for us to maintain year-round. We were fortunate to find an organic baking company that is the perfect partner with which to share a space: with equipment and space requirements similar to our own, sharing a commitment to making real food through ethical operations, and having a busy season that is the opposite of ours.
We also found the perfect space for our production needs. Designed specifically for growing food companies like ours, the building is the third in a series built by and for food entrepreneurs in the Boulder natural foods sector. The building was originally slated for completion in 2020 but it was delayed due to the pandemic. We finally moved into our space in February 2022 and have just received our operating permit from the county.
The building is brand new, and the tenant signs haven't even been put in yet.
From our space, we have a lovely view of Longs Peak mountain. One of Colorado's many "14ers", Longs Peak rises 14,259 feet above sea level and is the highest summit in Rocky Mountain National Park.
Inside the building, tenants have access to ample dry storage space. We'll definitely fill up our share in the fall with our ingredients, packaging, and supplies.
Tenants also have access to a large walk-in refrigerator and freezer for cold storage.
Moving on to our kitchen...we're still setting things up, but here's a bird's-eye view of the main area:
From the other side, you can see we have a mezzanine as well.
...which will come in handy for our office and fulfillment needs. We're still getting set up here too.
